WHere is a simplified interpretation of a cocktail featured on the seasonal menu. This is a large-volume prepared mix which is loaded with flavours of the Christmas time, which makes it perfect for a festive gathering. Save the extra cordial for breakfast cocktails, sweets, or to mix another batch of bikinis.
Bikini Recipe
Makes enough for 10 people
For the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Premix (yields 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Directions
For the Cordial: Combine all the components in a saucepan, bring to a simmer, agitating to dissolve. Then, turn off the heat and leave to reach room temperature entirely. Transfer to a sealable bottle, cap it keeping it in the fridge, where it will keep for up to four weeks.
Preparing the Cocktail Base: Pour all the liquids in a large bottle, leave to sit for an hour, then filter it , ideally through a fine cloth, so it's perfectly clear.
When ready to serve: Measure 85ml from the cocktail base into a stirring glass containing ice, and agitate gently for a minute until cold. Strain to a chilled martini glass or similar, garnish with a few cranberries and complete it using a brief mist of the essential oil above the glass.
